Fruits ripening is a very complex process in the plant and it must be supported in the defense and nutrition by the farmer to obtain a good harvest.
One of the most critical stages after the fruit-set is the sugars accumulation in the fruits.
The sugars (sucrose, glucose, and fructose) produced by photosynthesis are translocated from the leaves ("source" organs) towards the fruits ("sink" organs) through the phloematic vessels.
The passage of sugars from the phloem to the fruit is an active transport mediated by carrier proteins that load the sugars from the phloem and transport them to the fruits. This active transport requires energy and it is more efficient if the sugars are correctly complexed with molecules that increase permeability and therefore are more easily recognized by carrier proteins.
